The simpliest dinner in the world – spaghetti aglio olio (e peperoncino). You need to cut garlic and chilli pepper and put into a pan with classic olive oil. Cook for about 2 minutes so the garlic don’t get brown. Meanwhile cook spaghetti in a boiling water for about 8 min with salt (so you need to start cooking garlic and pepper when pasta is almost done). Then put the pasta into the pan straight from the pot so you have a bit of water too (use tongues). Add additional 3 tbspns of water from pasta, salt&pepper (freshly ground) stir and move into a plate. Pour some extra virgin olive oil and a lot of parmigiano-riggiano or grana padano (not from bag but freshly grated). Enjoy!:)
You will need (for 2):
200 gram good italian spaghetti pasta
2-3 garlic cloves
1 chilli pepper (no seeds)
2 tbsp of classic olive oil to cook garlic and chilli
2 tbsp of extra virgin olive oil to finish
50 gram parmigiano riggiano
salt and pepper
herbs (optional) to finish (basil or parsley)
